I've read of people doing these swaps all the time at off road shops into jeeps and custom buggies. Shouldn't be hard to find info on it. Most of the swaps are with the LS v8 but GM is GM. They are pretty much the same.
I would stick with keeping things simple with the tranny. To me dirt and computers don't mix. Easier to fix on the side of the trail.
And don't discredit the Ford carb. Its one of the best off road carbs ever made. It is also in my budget. CHEAP.

Hey there is a new injection kit from FAST called EZ-EFI. It is self tuning and bolts on to any 4150 bolt pattern 4 barrel intake. It is a little pricey but is about the easiest conversion I have ever seen. No laptop or programming.

For inexpensive tires try Treadwright. They retread 37" hummer tires with the old MTR pattern. They call the Guard Dog, I think. I'm running the old tread pattern on my Scout. When I got them I had them mounted on some aluminum wheels and balanced out very easily. The tire guys were very impressed.
Hey Chevy stuff is a good way to go. Don't count out the 305. Find them all over. More than a 4.3 less than a 350 just as good or better on gas. Spare tank must be a African thing. My 62 had a tank on both sides. 72 Chevy blazer tank under the back end now.
My 62 has a v8 because that was in the frame when I started. It takes a lot of firewall work to fit. V6 would be a good choice. Have to move the tranny and engine mounts forward to clear the wall.
Welcome to the hobby that never ends!! Go for the scout. Running is cheaper than not. Probably a 345 v8 with a 44 front and rear. Can't go wrong there. Saw all the fenders, patch the floors. Crawling going to tear it up anyway.

My avatar is the latest pic of it. It's not that bad, that's only 5 1/2 days worth of work. All that is left is half of the steering, master cyl., fuel tank, seats, wiring and the cage. I figure about a weeks worth of work.
